Tis hard to find the time to sit down and write something. Lots of exiting things are happening. The flat lake festival up in Monaghan was great craic even though the weather was trying to split the rocks. Busy now with a wedding in Shanagarry, then the preparations start for  Slow Food Terra Madrre in Waterford. Mick Quinn (waterford castle) and meself are cooking up a storm for the fri 5 Sept banquet dinner. We are going to cook most of it over large fires. Then we have some more exiting weddings to do around Ireland. Tis all go go go.
